The Perfect Cup of Coffee: Surprising as it may seem, there is a big difference between the taste of "fresh" coffee and "stale" coffee. What makes one cup of coffee so much better than another? Three simple, yet critical ingredients which we call the ART of coffee:

  1. Quality Arabica Coffee Beans
  2. Fresh Roasted Beans
  3. Proper Water Temperature for Brewing1

Spring Brewing Methods: Although you will generally be using only one type of brewer in your home or establishment, your friends or customers will have a variety of methods. It will be useful for you to understand these different methods as a point of reference. In addition, you will need to know the appropriate grind for different brewers if you will be using or selling whole bean coffee.

Type of Brewer Description Note Appropriate Grind
Basic Home Drip Coffee Maker Water is heated and then dripped over grinds in a brew basket or filter. Most home brewers don't heat the water to a high enough temperature so people often find their coffee does not taste as good at home. Regular grind for flat bottom filters, slightly finer for cone filters.
Bodum or French Press Water is boiled separately, then poured into a container directly in contact with the ground beans. After 1-3 minutes, a plunger-like filter is pushed down to contain the grounds, leaving brewed coffee above. This brewing method solves the water temperature problem, but often people are not happy with the fact that some grounds may be left in the bottom of their cup. Coarse grind
Percolator Ground coffee is placed in a basket above a water reservoir. As the water is heated, it rises and condenses to fall over the ground coffee. This is typically an older method of brewing, but is still favoured by some. Slightly more coarse than regular, but not as coarse as bodum.
Single Cup Cone Filters or Coffee Spring Water is boiled, then poured over grounds in a small filter into a single cup. For making an individual cup of coffee, this method is preferred by many as water temperature is maximized and grind sludge is minimized. Regular grind, some prefer slightly finer.
Espresso Machine Water is heated to boiling and the steam is forced over tightly compacted ground coffee to produce a very strong brew. Typically, this form of coffee is used to make specialty drinks although some like to drink a small amount of plain espresso. Very fine grind.
